Be careful amending because if you ordered before April 1st, you're not guaranteed to be price protected. The T-Roc went up by about £800 so they may ask you to pay that on top of any amendments you make.
You're really best to ask your dealer as they have to tell you the accurate cost.
Once the build week is confirmed, as I understand, amendments cannot be made to the order. Word of warning; changes to the order can affect the unconfirmed build week.
Controversial topic but actually people on this forum seem to be sensible enough to talk about it concerning our cars without attacking each other for their beliefs - which I'm quite impressed by (and I hope it remains that way!)
It's my main concern too. I don't have an extra ~£2,500 to pay for an already debatably overpriced car. My dealer told me this is the only cost that isn't covered by VW's Price Protection. VW have already said they would pass this fee on to customers, unless the customer has been specifically advised VW would absorb the cost themselves. Customers unaffected seem to only be those who ordered before 28th Feb 2019 from what I've read so everyone with an order placed after is liable for this cost (should the result be a hard-Brexit).
However, the 28th Feb cut-off was based on Brexit happening at the end of March. VW may move the date forward but I'm not holding my breath since there's no firm Brexit date now, only a soft date of 30th October.

Good idea but I don't think you actually need that in writing as you're covered by consumer law. A business cannot charge you more than the agreed price or that's breach of contract.
That said, probably less resistance from a dealer if you've got in in plain writing.

I should have added another route, which is to have options retro-fitted by the dealer or specialist workshop, but that is usually much more expensive than factory fitted.
But it really depends on what you want to change with your order. For example, retro-fitting a rear view camera has been widely discussed on the forum, either a badge mounted type or one which clips in to a number plate light. There are even some people getting a different coloured roof by having it wrapped, and some options maybe only require a few tweaks in the software using tools which plug in to the car's service & diagnostic interface.
You need to discuss with your dealer to establish if they can help, but what is it that you want to change ?
